Many of you have ask me for a good Keto bread recipe, well here it is! It has taken me a while to come up with a recipe that is perfect for sandwiches, toast, or French toast. Well, here it is and I sincerely hope you like! If you are not fond of rye bread, simply eliminate the caraway seeds. You might want to add cinnamon and nutmeg for French toast, or spread regular toast with cream cheese. You could even add chopped walnuts and half a banana. Get creative and please let me know what you created!

Keto Rye Bread

2 ½ cups almond flour
½ cup garbanzo bean flour
½ cup ground flaxseeds
1 tablespoon baking soda
½ teaspoon Himalayan pink salt
1 tablespoon finely ground caraway seeds
1 teaspoon whole caraway seeds, optional
10 eggs, separated
½ cup butter
¼ cup buttermilk
1 packet Stevia or 3 to 4 drops liquid Stevia

Preheat oven to 350 degrees and grease an 8 ½” x 4 ½” loaf pan with butter or ghee.

In a medium sized bowl, combine almond flour, garbanzo bear flour, ground flax seeds, baking soda, and salt. Stir ingredients until thoroughly blended. Add the ground caraway seeds, egg yolks, butter, buttermilk, and Stevia. Using a hand mixer pulse just long enough to blend mixture. Set aside.

In a large bowl, beat egg whites with hand held mixer until soft peaks form. Add egg whites to flour mixture and blend. Avoid over mixing batter. Scoop into prepared bread pan and spread evenly. You may sprinkle whole caraway seeds on top of mixture if you choose.

Place in oven and bake for 50 minutes, or until inserted toothpick comes out clean. Remove bread from oven and cool for 20 minutes. Do not attempt to remove bread from pan to soon as it may pull apart. Remove from pan and place on a cutting board. You may want to slice the loaf before refrigerating and just pull out what you need.

Keep bread refrigerated as it has eggs and no preservatives.

20 grams total fat, 12 grams protein, 8 grams carbohydrates per average slice
